Depending on the pallet, you might get two or three rows of shelving. The deck boards will serve as the front and back of your pocket shelf, with the stringer as the bottom. Consider trimming the front deck boards shorter than the back for easy access to your books. Sand, paint, or stain the shelves after cutting, then screw them to the walls and closet door.
